Recommending Korean food to someone visiting from abroad is trickier than it sounds. It is hot, it is shared, and the names are hard to explain.

Eolssu Bistro sidesteps all three. Dishes arrive one plate at a time, heat is not the default, and one look at the plate usually tells you roughly what it is.

There is a reason for the word “bistro”. Rather than laying the whole table at once as a hanjeongsik meal does, dishes come out one at a time in sequence. So the shape of the meal holds up whether there are two of you or four.

Hairtail dumplings — the one dish you must order

Half the reason for writing this is the hairtail dumpling. It is called a dumpling, but there is no wheat wrapper. Hairtail flesh is wrapped around the filling, rolled thick, and the outside grilled to a deep gold. The silver skin is still there, so until you cut into it you cannot tell whether it is fish or dumpling.

There is an order to the first mouthful. The toasted savour of the grilled hairtail skin comes first, then the softness of the filling, and finally the sweetness of the hairtail itself. There is almost no fishiness. Eaten with the green sauce served alongside, the richness is cut back.

There is a fried version too. The outside is crisp and the inside is the same, but a yellow minced sauce on top adds sourness. If the grilled one is about the ingredient, the fried one leans towards a drinking snack.

Clam soup and pork jowl — the two signature dishes listed on Google Maps

Google Maps lists clam soup and doenjang-cured grilled pork jowl as this restaurant’s signature dishes. Both have a clear character.

The clam soup is clear. A few slices of cheongyang chilli float in the clam broth, pushing it towards the bracing end. The clams are large and plump, so it would be a waste to leave anything but the broth. Placed where it can rinse away the richer plate before it, it fits exactly.

The doenjang-cured grilled pork jowl is the opposite. Pork jowl that has been buried in doenjang is grilled, and the saltiness has gone right into the meat, so you will want rice. Eaten with the myeongnan served alongside, the salt stacks up, so it is better to alternate with rice or with the clam broth.

The other plates — sashimi, octopus, japchae

Because the plates come one at a time, what you order and how you mix it is itself the shape of the meal. These are the ones we remember from what came out.

Stir-fried octopus. For when you want one hot thing on the table. Stir-fried with cheongyang chilli and vegetables, the heat rises afterwards. It is best with rice.

Japchae. It arrives near the end. The glass noodles have not gone soft, and the vegetables and meat are cut thick enough to chew. An easy plate to pick at once the evening drifts towards drinking.

Better to book. This is the Yeouido business district, so weekday evenings collide with office dinners. Saturday opens only from 16:00, and Sunday is closed.
