Grilled okdom — what the name is built on

Just as the sign says, grilled okdom is the centre of this menu. 60,000 won for medium, 70,000 won for large. Even allowing for Jeju prices that is not cheap, which is exactly why you think twice before ordering it.

What arrives is two whole grilled okdom. The backs are well browned and the fin tips have curled up crisp.

Okdom (tilefish) is a lean white fish. Grilled, what reaches you first is not the smell of fat but the sweetness of the fish itself. The flesh comes away in large flakes along the grain, and it is firm rather than dry.

How to eat it. Take the flesh off the back first in large pieces and save the belly, and the last mouthful is better for it. Among the side dishes, alternating with the vegetable namul rather than the salty jeotgal or pickles keeps them from covering the taste of the fish.

Clear fish soup. A stainless bowl of pale broth, heaped with shredded radish and topped with a few slices of green chilli. Lift the radish aside with your chopsticks and there are pieces of fish underneath. The broth is not cloudy, the seasoning is restrained, and the sweetness drawn from the fish stays behind.
