The Gwanghwamun intersection, the Le Meilleur building on Jongno. Go down to the first basement floor and there is a single sushi counter.
Omakase starts the moment you sit at the counter. What is set in front of you keeps changing, and the person deciding that order is standing right there.
The course here opens with starters, moves through sashimi into nigiri, breaks once for a stone-pot rice, and ends with rolls.
Lunch 60,000 won, dinner 110,000 won. There is no shortage of omakase in this price range around Gwanghwamun, but few hold ★4.7 past 100 reviews.

Starters and sashimi — the front of the course
It opens with a few small vessels: a plate of thin-sliced red fish under a dressing, something cold in a glass bowl, and a bite wrapped in seaweed.

The dish in the glass bowl is cool. Thin slices float in broth with petal-like red pieces on top. The first spoonful brings temperature first and flavour after.

Sashimi comes layered on a blue-and-white porcelain plate with perilla leaf. The thickness is even and the edges are clean. A very small touch of soy is what keeps the sweetness of the white fish.

A gunkan of sea urchin wrapped in seaweed comes out too. Shredded garnish is piled on top, with the yellow urchin hidden beneath. The seaweed reaches you first, the sweetness of the urchin after.

Nigiri — one piece at a time on the slab
Nigiri is set on the black slab one piece at a time. The moment it lands is the moment to eat it, which does not leave long for photos.
It starts with white fish. A thin slice over the rice, the edges pressed into shape by hand. The rice is warm and the fish is cold, so the difference in temperature registers before anything else.

Oily fish is scored on the skin side and topped with a chopped garnish. It is a fatty cut, so it balances against rice seasoned firmly with vinegar.

Lean tuna is deep in colour. The grain is tight enough that it goes down in one piece rather than breaking up. Soy is brushed on in advance, so you just pick it up and eat.
Near the end, one piece of conger eel arrives. Grilled warm and brushed with sauce, it dissolves in the mouth. Its place in the order is to contrast with the cold nigiri before it.

Stone-pot rice and the finish — rolls
Partway through the course a stone pot arrives. Green vegetables line the bottom, three pieces of grilled fish sit on top, and the lid goes on while it cooks.
Lifting the lid sends up one big wave of aroma. The fish oil has soaked into the rice and the greens have kept their colour. A bowl of rice in the middle of a run of nigiri slows the pace for a moment.
The roll comes out whole on a wooden board, wrapped in seaweed with sesame and powder dusted over the top, then cut in front of you.

Last comes the maki, stood upright on a blue-and-white porcelain plate so the cross-section faces out. White rice, red fish and yellow egg in visible layers: the signal that the course is over.
